  • Guacolmole

    2 avocados
    2 medium tomatoes
    1/4 cup onion, chopped
    1 lime or lemon
    1/3 cup cilantro, chopped
    1 garlic clove, chopped
    1/2 teaspoon salt
    1/2 teaspoon cumin
    1 tablespoon chopped jalapeno (optional)
Cut avocados lengthwise, remove pit and scoop avocado into medium bowl. Keep one or both pit if you are not eating the guacamole right away.
Cut lime in half and add juice of whole lime to avocados.
Mash avocados until desired smoothness. I prefer it to be a little chunky.Add the rest of the ingredients and stir.
I prefer to chill my guacamole and so I put one of the pits back in the guacamole and cover, it helps to keeps it from discoloring.
    Enjoy!

  • Tex-Mex Brunch Wraps or Taquitos

    2 Tbsp. butter
1 red bell pepper, finely chopped
    6 green onions, thinly sliced
    1 (1-lb.) ham steak, chopped
    10 large eggs
    1/2 tsp. coarsely ground pepper
1 (16 oz.) can refried beans
    10 soft taco-size flour tortillas
1 (8 oz.) package shredded Cheddar Jack Cheese

Melt butter in large skillet over medium to high heat. Add bell pepper and green onions, and saute 2 minutes or until tender. Stir in ham, and cook 2 more minutes or until thoroughly heated.
Whisk together eggs and pepper, pour over ham mixture. Cook without stirring, over medium heat until eggs begin to set on bottom.. Stir breaking up eggs. Cook, stirring occasionally, 2-3 minutes until eggs are thickened and moist. Spoon egg mixture into a largee bowl to cool 15 minutes.
Cut 10 (12 inch) aluminum foil squares.
Spread 2 Tbsp. beans down center of each tortillas; top with 1/4 cup egg mixture, and sprindle with 2 Tsps. cheese. Roll up tortillas; wrap each tightly in a piece of foil and crimp edges under. place on pan and bake at 350 degrees for 15 minutes.

Bacon or sausage can be substituted for ham. I like to add chopped Serano or Jalepeno peppers to this. And you can use leftover pinto beans mashed up instead of refried beans from the store.
